The English term for the rice used in sushi is "sushi rice". It refers to short-grain Japonica rice that is seasoned with vinegar, sugar, and salt to achieve the sticky texture essential for forming sushi. In Japan, this type of rice is also called shari or sumeshi (vinegared rice).
The term "sushi rice" is commonly used internationally, even though the rice itself is a specific variety of Japanese short-grain rice (uruchimai), distinct from glutinous rice (mochigome). When prepared, its stickiness allows it to hold shape in sushi rolls (maki) or hand-pressed nigiri.
